Te Arawa Fisheries caught up with the Kuku Mussels team at Otago University this week to get a progress update on their work developing three new mussel flavours.
The group is making great strides, having identified six unique flavours that pass all or most of the criteria that determines their viability in the domestic market.
Extensive market and consumer research is being conducted to ensure any products created reaches the intended market.
The team will now move on to recipe formulations for each of these flavours and screening down to their final three flavours.
As part of our partnership, Te Arawa Fisheries has shared our process and the technology used to create our infused Hī mussels, and has sent the team samples of both our infused and marinated products.
